Heatwave!!!! The last time I checked today, it was around 35 degrees (95f).
Now, I know I live in one of the hottest states, in one of the hottest countries in the world - but I really don't like the heat. I'm not a fan of swimming either in the pool or the ocean and find I get heatstroke rather easily.
For instance, today we went to a small parkland 5 minutes walk from my house, to take our annual Christmas photo of the boys (which will need to be reshot as the light was too dappled and the Roman fell in the pond and got wet & dirty!), and by the time we got back from that I was pretty out of it. I drink plenty of water and always wear a hat but I think I just am not meant to be out in the sun.
Anyway, all of this chatter is leading to our favourite way to cool down.
Super Simple Mango Ice Cream
3 cups of frozen Mango, cubed
1/2 cup ice cold water
• mix it all together with a stick mixer until creamy and smooth.
So easy & healthy. We can't get enough.

Mmmm....no sugar?! I've bought mango sorbet, but it also has sugar in it...this sounds really good. ♥ Our days are opposite, becoming colder, some snow expected later today here.
ReplyDeleteAbsolutely no sugar! We were also buying sorbet (Lemon!) but way to much sugar! We all love this without the added sweetness so that's a plus!
DeleteRidiculous hot. Thankfully you have just reminded me that I made something similar to yours last mango season and it is buried somewhere in the freezer. Will now go and rummage in the freezer which is not such a bad thing to do. cheers Wendy
ReplyDeletewhen we visited Sicily a few years ago in June, beginning of summer, it was 43C, and I - a heat lover, or at any rate a person hypersensitive to cold weather - thought i was going to die. Tons of sicilian lemon 'granita' (Italian ice?) is what kept me alive.
ReplyDeleteYUM! Unfortunately no mangos to buy over here, very sad! And I have missed so many of your posts, you have been busy :) I could not live over there with all that heat, I hate sweating and get so grumpy, I think it is even worse to be stuck inside because of heat that because of cold. But visit I could, maybe one day Shara I will just pop over, but in winter time :)
